Process

  1. Prep the Produce 1

    Prep the Produce

Adjust rack to top position and preheat oven to 425 degrees. Wash and dry all produce. Cut broccoli florets into bite-size pieces. Trim and thinly slice scallions, separating whites from greens.

  2. Create the Crunch 2

    Create the Crunch

Place 1 TBSP butter in a medium microwave-safe bowl; microwave until melted, 30-45 seconds. Stir in panko, Monterey Jack, remaining Frank's RedHot® Original Seasoning, and a big pinch of both salt and pepper.

  3. Roast the Broccoli 3

    Roast the Broccoli

Toss broccoli on a baking sheet with a drizzle of oil, salt, and pepper. Roast on top rack until browned and tender, 12-15 minutes.

  4. Bread the Chicken 4

    Bread the Chicken

Pat chicken dry; season with salt and pepper. Coat with a thin layer of sour cream, then press into panko mixture until fully coated.

  5. Bake the Cutlets 5

    Bake the Cutlets

Place chicken on the other side of the broccoli baking sheet. Bake until cooked through and golden brown, 10-12 minutes.

  6. Finish & Serve 6

    Finish & Serve

Drizzle chicken with honey and remaining hot sauce. Serve alongside roasted broccoli and mashed potatoes.

Toss asparagus with olive oil, salt, and pepper.

Air fry at 375°F for 7–9 minutes.

Finish with parmesan and a drizzle of truffle oil.

The Origin Story

Born out of a desire to capture the iconic flavor of Buffalo wings without the messy, deep-fried hassle, this recipe reimagines the classic. We took the signature tangy heat of Frank's RedHot and engineered a crispy baked cutlet that delivers a true crunch and flavor of a wing, deconstructed as a sophisticated weeknight dinner.

Best Paired With

Crisp Lager

Cuts through the heat perfectly.

Celery & Ranch Slaw

A refreshing, crunchy counterpart.

Garlic Knots

Garlic Knots

For soaking up any leftover sauce.

Spiked Lemonade

Spiked Lemonade

Sweet, tart, and dangerously drinkable.

Storage & Leftovers

Refrigeration

Store leftover cutlets in an airtight container for up to 3 days. To maximize crispiness, reheat in the oven or air fryer at 375°F until warmed through.

Freezing

Not recommended. The panko crust will lose its signature crunch upon thawing.

Leftover Idea

Slice cold cutlets thin and toss a crisp romaine salad with blue cheese dressing and celery shards for an instant Buffalo chicken salad.

Common Pitfalls

Soggy Crust

Don't crowd the baking sheet. Give the cutlets room to breathe so they roast rather than steam. Airflow is essential for that signature crunch.

Burnt Panko

Keep an eye on them in the last 5 minutes. If the topping is browning too quickly, tent loosely with foil to protect the delicate breadcrumbs.

Uneven Cooking

Pound your cutlets to an even thickness before breading. This ensures perfect cooking throughout and prevents dry edges.

Overcrowding the Basket

In an air fryer, air must circulate around every inch of the cutlet. If they overlap, the sides will remain pale and soggy instead of golden-brown.

Not Preheating

Just like an oven, an air fryer needs to be at temperature before the food goes in. Starting cold leads to longer cook times and tougher results.

Punching the Flip

Even with high airflow, the bottom of the cutlet can trap moisture against the basket. Flip halfway through to ensure both sides achieve maximum crunch.

Frequently Asked Questions

Can I make this in an air fryer? expand_more

Yes. Air fry at 400°F for 10–12 minutes, flipping once, until the crust is deep gold and the cutlets are cooked through. Don't stack them — work in batches so the panko stays crisp.

What can I substitute for Monterey Jack? expand_more

Mild cheddar, mozzarella, or pepper jack all melt into the panko the same way. Pepper jack adds extra heat if you want the Buffalo notes louder.

Is this recipe gluten-free? expand_more

Not as written. Swap in gluten-free panko and confirm your hot sauce and seasoning blend are certified gluten-free. The method stays the same.
